The Amphora Sauvignon Blanc forms part of our Projects Range. These are wines we can get geeky about—interesting, small runs and slightly quirky—but always delicious!
Whole bunch pressed and 100% wild fermented in clay amphorae. Aged for seven months on gross lees without any additions, with minimal SO₂ additions just before bottling. Locally made, these amphorae have been developed over ten years of trial and error. Ranging in sizes—between 500L and 860L—they are porous, with no lining inside, allowing for the perfect amount of micro-oxidation during maturation.
Tasting Notes: Another alluringly atypical expression of Sauvignon Blanc, with aromas of wet stone, passion fruit and white pear to the fore. The variety is betrayed by a distinctive blackcurrant leaf note on the nose and dried seaweed on the palate, whilst a faintly leesy mouthfeel fills the mid-palate. A zippy, citrus-rind acidity keeps the wine tense and energetic.
50% own grapes, 50% Olifants River. Spontaneously fermented and matured in clay amphorae. Peach, nectarine and some floral perfume on the nose while the palate is broad with a creamy texture and moderate acidity, the finish gently savoury. Soft, approachable, and quietly confident in its individuality. Alc: 13.5%. CE’s rating: 91/100.
