Winemakers pressed the 2024 grapes. They settled overnight. Natural fermentation happened in 4th-fill French oak barrels. The wine aged on its lees for nine months. Winemakers used no finings or enzymes. They produced only 3,211 bottles. Drink it now or cellar it for 2 to 7 years
Tasting Notes: Expect a subtle, intricate nose with notes of pear, peach, quince, and, at times, a distinct earthiness or hint of flint. Dry, light-bodied, and having high acidity, with recent vintages showing a "creamy" or textural mouthfeel due to extended lees contact. Offers a focused, mineral-driven, and crisp experience, often with a savory, pithy finish. Pairing: Highly food-friendly, well-suited for seafood, sushi, roast chicken, or risotto.
Matured for seven months in fourth-fill barrels. Other than a subtle citrus note, the nose is restrained. The palate is all about texture rather than overt flavour – dense and weighty fruit, countered by bracing acidity. The finish is long and intensely savoury. Alc: 13.46%. CE’s rating: 92/100.
