Traditional. 10% whole bunch. Fermented in small, open-top oak fermenters, with spontaneous fermentations
using wild yeasts only. A combination of gentle pump-overs and punch-downs ensures the extraction of only
the finest tannins. Lightly basket-pressed to retain fruit purity. Aged for 12 months in Burgundy 228L barrels,
25% new. Nine months of further aging in bottle before release.
Tasting Notes: Elegant floral and red fruit aromas (like summer pudding, goji, red berries, orange) with underlying musk and earthy notes, leading to a graceful palate with fresh acidity, fine tannins, good fruit definition, and a gently savory finish, noted for its elegance and balance.

From vineyards planted from 2017 to 2020 on both granite and Cederberg shale. 10% whole-bunch fermentation. Matured for 12 months in 228-litre barrels, 30% new. The nose is still very primary with notes of red cherry, rose, musk and a hint of vanilla. The palate is precise – medium bodied with good clarity of fruit, fresh acidity and super-fine tannins, the finish persistent. Alc: 13.6%. CE’s rating: 93/100.
