ANTARES, is an ever changing field blend of Chenin blanc, Semillion and Sauvignon blanc. It is made with natural fermentation and minimum sulphur, all with the idea to serve the most natural wine in your glass.
ANTARES is the brightest star in the Scorpius constellation, also referred to as “the heart of the scorpion”.
50% Chenin blanc | 28% Semillon | 22% Sauvignon blanc. 100% Malolactic
The vineyard is designed, planted, pruned and managed by me and my father on our small farm, Le lit de Franken, in the beautiful valley of Buffeljags River, close to Swellendam, in the heart of the Overberg Region.
The grapes are whole bunch pressed together and the juice is left to settle naturally over night. Followed by a
light racking from the lees to stainless steel tank to wait for the natural fermentation to start. The fermenting wine is then transferred to 225 L older French oak barrels where it ages for 9 months on the gross lees. At bottling, the wine is lightly fined and filtered to serve the most pure, natural, healthy wine in your glass.
Tasting Notes: The nose is vibrant with first notes of orange blossom, nectarine, melon and zesty lemon
with hints of brioche and anise seed. The palate is layered with tasty textures, almost saline like, and a fresh lingering acidity with aromas of nectarines, fresh citrus, melon and honey suckle. There is a purity to the wine that resembles the honest, natural, organic farming and the beautiful, complex terroir of the Buffeljags river.
Food Pairing: I would recommend pairing it with lobster/prawns grilled on the fire and basted with lots of
butter and garlic or a slow roasted rib of lamb prepared on the fire with a garlic and herb spice.
