This range of wines exists to allow winemaking imagination and passion free reign… these wines are disinterested in market trends or the whims of wine writers and commentators – we craft these wines to dance that beautiful dance whose beat is the seasons and whose music is luck.
After 3 pickings and destemming, we meticulously berry-sorted the grapes and transferred them to open-top fermenters. Cold soaked on the skins preceded fermentation, which began naturally with wild yeast. To preserve the delicate aromatics and structure, we performed one gentle punch down or cap wetting daily, ensuring the cap stayed submerged. The fermentation was cool at 12°C, and after 6 days on the skins, we pressed the wine using a traditional basket press. It was then transferred directly to barrel to complete fermentation.
Tasting Notes: Fresh apple, pear and quince with subtle notes of bay leaf, cardamom and smoky nuttiness adding savoury depth. Creamy and juicy on entry, with ripe orchard fruit and a gently textured, almost oily mouthfeel. Bright lime acidity brings freshness and focus through the mid-palate. Long and refreshing, with lingering lime, citrus and a subtle savoury, nutty character.
Food Pairing: With its textured palate and notes of bay leaf, cardamom, smoky nuttiness, and lime‑fresh acidity, pairs beautifully with Seared Scallops: The wine’s creamy texture works beautifully with sweet, caramelised scallops, while the lime acidity keeps the pairing fresh. Prawn & Garlic Linguine: Juicy fruit and vibrant acidity complement prawns and garlic without overwhelming their delicate flavour. Thai Green Curry: The wine’s texture and fresh acidity are well suited to aromatic, gently spicy dishes. Roast Chicken with Lemon & Herbs: The creamy Chenin mirrors the richness of the chicken while its citrus lift cuts through the savoury flavours. Brie & Fresh Pear: A simple but elegant pairing, bringing together the wine’s pear character, creamy texture and gentle acidity. These pairings align particularly well with published recommendations for seafood, shellfish, mild cheeses and spicy dishes.
