Red Blend – Cabernet Sauvignon, Shiraz & Merlot This estate blend is a masterful composition of three noble varieties, each contributing its own voice to the harmony of the wine. Cabernet Sauvignon lends structure, depth, and gravitas, forming the backbone of the blend with firm tannins and classic cassis notes. Merlot softens the edges, bringing plush fruit and approachability, ensuring the wine is generous and inviting. Shiraz adds a vibrant lift of spice and dark berry richness, weaving in complexity and intrigue.
Together, they create a wine that is both serious and supple, layered yet accessible.
Hand‑harvested grapes are carefully crushed, destemmed, and fermented in stainless steel tanks for 5–7 days, depending on varietal. The must is inoculated with certified biodynamic yeast strains, enhancing varietal purity and terroir expression. After gentle pressing, the wine undergoes malolactic conversion in stainless steel, ensuring a smooth, rounded texture. The wine is then matured for 16–18 months in French and Hungarian oak barrels (225L and 300L), where it develops subtle notes of vanilla, cedar, and spice. After ageing, the components are blended and rested in concrete tanks until bottling, allowing the flavors to knit together seamlessly.
Tasting Notes: This wine presents an intriguing herbaceous profile, layered with earthy nuances, crushed leaf tones, and even a whisper of agave. Importantly, these elements are refined and integrated, free from any harsh green or bitter edges, offering complexity without compromise.
