Pinot Noir 90%, Chardonnay 10%
Made from a single vineyard situated 300 metres above sea level and caressed by the cooling sea
breezes from the Atlantic a few kilometres away. Rainwater is retained in the iron-rich clay and
cobble soils which results in low yield and flavour concentration.
10% of the base wine was fermented in seasoned French oak barrels, with the balance vinified in
stainless steel to preserve its crisp, fruit-driven profile. A subtle rosé hue was achieved through
brief skin contact before pressing, capturing the essence of Pinot Noir’s red berry character without
sacrificing finesse.Following blending, the wine underwent secondary fermentation in bottle and
was aged on the lees for 31 months.
Tasting Notes: The nose reveals aromas of wild strawberry, pomegranate, and pink grapefruit, with subtle hints
of rose petal and pastry. The palate is crisp and lively, with a fine, persistent mousse and delicate texture. Dry and refreshing, yet layered with red berry complexity, it finishes with elegance and mineral lift.
