Elgin is the coolest wine region in South Africa. This cool climate allows for the perfect ripening of grapes, creating wines that have freshness, flavour and balance. Crepuscule means twilight and is the delicate example of these unique characters
Made from a single vineyard situated 300 metres above sea level and caressed by the cooling sea breezes from
the Atlantic a few kilometres away. Rainwater is retained in the iron-rich clay and cobble soils which results in low yield and flavour concentration.
Grapes are hand-picked early in the morning to ensure optimal freshness. The bunches are pressed whole and
only the cuvee is used to make the base wine. After the alcoholic fermentation, the wines are bottled and yeast
introduced for a second fermenta- tion. The bottles ferment and mature horizontally in a cool dark cellar for
a minimum of 30 months. It is then riddled and disgorged It is left for a further 30 days to mature on the cork to
allow integration and balance.
Tasting Notes: The nose is taut and refined, with notes of lemon zest, green apple, crushed oyster shell, and delicate florals. On the palate, it is dry and chiselled, with a fine bead and a linear, mineral character. It is a wine of striking clarity and structure, finishing with length, salinity, and quiet intensity.
