illimis, Latin for "clarity", reflects Lucinda Heyns' commitment to expressing each vineyard's true character. Born in Namibia and trained in viticulture in South Africa, with experience in California and Italy, Lucinda founded Illimis in 2015. Her minimalist approach to winemaking allows nature and each vintage to shine, creating wines that speak authentically of their origin.
Chenin Blanc blends two sites: half the fruit from the cool Elgin Valley, half from the Polkadraai Hills in Stellenbosch. Elgin’s long, slow ripening season gives the wine its racy acidity and concentration, while the Stellenbosch fruit adds texture and vibrant aromatics.
The result is understated and precise, a Chenin that favours texture and balance over volume.
Tasting Notes: Elegant, textural and beautifully composed. Aromas of white peach, ripe pear and citrus blossom are immediately captivating, supported by more nuanced notes of honeycomb, preserved lemon, wet stone and subtle spice. The bouquet is both generous and restrained, revealing layer after layer with time in the glass. The palate strikes a compelling balance between richness and precision. Concentrated stone fruit flavours are carried by crystalline acidity, creating a sense of effortless tension and energy. Texture plays a central role, lending depth and complexity without sacrificing freshness or definition. A distinctive mineral backbone provides focus from start to finish, while hints of citrus zest, orchard fruit and delicate honeyed notes linger beautifully on the long, polished finish. Combining purity, complexity and poise, this is a Chenin Blanc that speaks of refinement and place.
Food Pairing: The texture and freshness of this Chenin Blanc open the door to a wide range of luxurious food pairings. Fresh oysters, dressed simply with lemon, amplify the wine's saline minerality and crystalline acidity, while butter-poached crayfish, lobster and grilled langoustines complement its generous stone fruit character. Rich seafood dishes such as seared scallops with brown butter or line fish finished with beurre blanc find perfect balance in the wine's combination of freshness and weight. The wine's layered texture also makes it superb alongside roast chicken with thyme and cultured butter, chicken supreme with a creamy morel sauce, or pork belly with apple compote. Soft-ripened cheeses and aged goat's milk cheeses are particularly rewarding, as the acidity refreshes the palate while highlighting the wine's subtle honeyed complexity. Whether paired with elegant seafood, refined poultry dishes or vibrant coastal cuisine, this is a wine that rewards thoughtful food and elevates every course.
