illimis, Latin for "clarity", reflects Lucinda Heyns' commitment to expressing each vineyard's true character. Born in Namibia and trained in viticulture in South Africa, with experience in California and Italy, Lucinda founded Illimis in 2015. Her minimalist approach to winemaking allows nature and each vintage to shine, creating wines that speak authentically of their origin.
This is Lucinda Heyns’ single vineyard Cinsault, grown on a dry farmed bush vine block in Darling planted in 1974, on red loam soils. Darling has become one of the Cape’s great addresses for old vine Cinsault, and this is among the most delicate and finessed examples around.
It is a wine about lift and clarity, light on its feet, with real presence for something so pale and gentle.
The fruit was fermented entirely as whole bunches with native yeasts, then pressed after 12 days on skins. The wine matured for seven months in neutral 225 litre French barrels, so the oak is there only for breathing space, not flavour. Minimal intervention from vineyard to bottle.
Tasting Notes: Graceful, perfumed and quietly captivating. Aromas of wild strawberry, red cherry and ripe pomegranate rise effortlessly from the glass, layered with crushed rose petals, dried herbs and subtle hints of white pepper and spice. Beneath the bright fruit lies a gentle savoury complexity that adds depth and intrigue. On the palate, the wine is defined by purity and finesse. Silky tannins and vibrant natural acidity create a seamless, weightless texture, while waves of red berry fruit glide across the palate with remarkable precision. A delicate mineral thread runs throughout, bringing freshness and energy to the wine's expressive fruit profile. The finish is long, detailed and beautifully poised, lingering with notes of cherry skin, dried flowers and subtle earthiness. Refined rather than powerful, this is a Cinsault that rewards attention and showcases the variety in its most elegant and sophisticated form.
Food Pairing: The elegance and brightness of this Cinsault make it a remarkably versatile companion at the table. Roast free-range chicken with thyme and garlic highlights the wine's red berry purity, while duck breast with a cherry glaze draws out its floral perfume and subtle spice.
