The Blend: 

63% Elgin, 30% Polkadraai Hills, 7% Cape Agulhas

Elgin forms the skeleton, with it’s structure and a core of fruit, oud and woodier spices give way to the Polkadraai’s floral, briny notes and distinct black pepper. Agulhas lends bacon fat and white pepper aromatics with unmistakable salinity on the palate.

Elgin - 15% Wholebunch: Fermented in open concrete kuipe, with twice daily manual punch downs. 19-22 days on skins

Cape Agulhas -  66% Wholeberry, 33% Wholebunch:14 days on skins

Stellenbosch - 100% Wholebunch: 10-14 days on skins
