This is the second bottling of Twiswind, and this 2025 version displays wonderful balance throughout. It is ironic, as it is a twelve-varietal wine.
Twiswind is the Sadie family's experiment in resilience: a single co-planted vineyard on the Paardeberg, planted in 2021 on weathered granite, carrying twelve white varieties, among them Vermentino, Picpoul, Marsanne, Grenache Blanc, Cinsaut Blanc, Palomino, Chenin Blanc, Grillo, Assyrtiko, Verdelho, Clairette Blanche and Semillon. The concept behind this wine is establishing a single vineyard site with futuristic grape varieties that will brace and stand in the future climate change. At the same time, the vineyard, with a myriad of dynamics and grape varieties, will enable us to produce a complex wine by virtue of its dynamics
The Paardeberg's coarse, well drained weathered granite brings early ripeness with natural acidity and moderate alcohol. The vineyard is picked in two stages, each co-fermented and blended early, working toward an eventual single co-fermented pick as the site's balance across varieties improves further. After pressing, the wine ages in concrete and old wooden vats that add no oak flavour, spending 11 months on the lees before racking to tank, with 65mg/L sulphur added at bottling from the fine lees. Yield: 30 hl/ha
Tasting Notes: A signature green apple character opens into riper, more tropical fruit, with a lemony, creamy, faintly toasty texture wrapped in firm tannin. This second vintage of Twiswind is remarkably harmonious for a twelve variety blend, showing real balance rather than the disjointed patchwork one might expect.
Food Pairing: Green‑apple brightness, tropical aromas, and creamy, toasty texture make it a versatile white that pairs seamlessly with roast chicken, lobster in butter sauce, or seared scallops with beurre blanc. Its balance of freshness and richness also complements leek tarts, gratins, and Mediterranean dishes like grilled halloumi or roasted peppers. This twelve‑varietal blend delivers complexity that enhances both refined seafood and comforting poultry dishes.
