A remarkable old-vine Chenin Blanc from a 1956 Paarl vineyard, combining richness, minerality and exceptional freshness
The Savage Never Been Asked to Dance is a singular expression of South African Chenin Blanc, drawn from a remarkable vineyard planted in 1956 on the border of Paarl and Stellenbosch. These dry‑farmed bush vines, rooted in decomposed granite, yield naturally concentrated fruit of striking freshness, texture, and mineral drive.
Vineyard selection is meticulous, with the tightly packed bunches of these venerable vines requiring rigorous sorting. Grapes are cooled overnight before whole‑bunch pressing in an oxidative style, followed by native fermentation and full malolactic conversion. The wine then rests for approximately ten months in older 600‑litre Stockinger barrels, allowing for measured development without obscuring vineyard character.
The interplay of old vines, granite soils, natural fermentation, and extended maturation produces a Chenin Blanc of both generosity and tension. It carries the richness and texture often associated with mature Chenin, yet remains firmly dry, savoury, and energetic. Critics have underscored its pedigree: Tim Atkin describes it as a highly polished, Burgundian interpretation of Chenin, while Christian Eedes highlights its vitality, richness, and textural complexity. This bottling stands as a benchmark of Cape Chenin, combining heritage with precision and a profound sense of place.
Tasting notes: The nose is expressive and complex, with ripe citrus, yellow apple, white peach, pineapple pastille and subtle oatmeal. Behind the fruit sits a wonderful herbal and fynbos character, together with gentle lees and mineral notes from the granite soils. The palate is broad and textured but never heavy. Citrus and orchard fruit combine with ripe pineapple, peach and subtle creaminess, while fresh acidity keeps everything focused. A distinctive saline-mineral core runs through the wine, giving it length and energy. The finish is savoury, dry and beautifully persistent, with the old vines bringing remarkable depth and concentration. The vintage shows the typical saline core and purity expected from this old vineyard. Drinks well young but will reward for many years.
Food pairing: An outstanding food wine. Pair it with roast chicken, chicken with a cream and herb sauce, pork loin, roast cauliflower, seafood pasta or grilled prawns. It is particularly good with richer fish dishes such as line fish with beurre blanc, creamy seafood risotto or seared scallops. The acidity and saline character also make it a natural match for sushi, sashimi and lightly spiced Asian cuisine.
