Quiet confidence from Elgin’s most precise Merlot vineyard
From the cool, elevated slopes of the Elgin Valley, Shannon Vineyards has become known for wines that speak with restraint, purity and a strong sense of place. The Mount Bullet 2021 comes from a 3-hectare single vineyard planted to five Merlot clones. Each parcel is harvested and vinified separately before being carefully blended, allowing the individuality of each clone and block to come through in the final wine. The approach is deliberately low intervention, with fermentation and maturation designed to preserve clarity of fruit, freshness and structural finesse.
Tasting notes: Bright ruby in the glass with aromas of red cherry, plum and ripe berries, layered with subtle floral lift and gentle earthy undertones. The palate is medium-bodied and finely textured, showing pure red fruit, cherry and plum skin with a touch of graphite and savoury spice. Tannins are fine and polished, giving structure without heaviness. Fresh acidity runs through the wine, keeping it vibrant and focused, while the finish is long, clean and elegantly mineral.
Food pairing: A refined and versatile Merlot that works beautifully across a range of dishes. Roast Lamb: Herb-crusted or slow-roasted lamb enhances the wine’s dark fruit core and savoury depth. Duck Breast: Pan-seared duck with cherry or plum glaze highlights its red fruit brightness and soft structure. Mushroom Risotto: Earthy mushrooms mirror the wine’s subtle forest-floor character and add depth. Pork Dishes: Roast pork or pork belly with light spice or fruit reduction pairs naturally with its supple tannins.
